Superfoods Saturday update

superfoods are waiting for you!

We’ve done two small, fun, and delicious Saturday Morning Superfood events so far and we’ve got lots more!

This week we’re featuring homemade Oatmeal Apple Spice Granola with almond milk that we’ll make in the workshop. We’ll also, hopefully, have some pesto kale chips if I don’t eat all of them before then! :-)

For those who are looking for the pesto recipe from last week, I’ll have a full one up at soon, but for now, the basic recipe is:

Wood Sorrel Walnut Basil Pesto

2 cups walnuts
2-3 cups basil
1-3 cups wood sorrel
1 tsp sea salt (or to taste)
Olive Oil to bring the pest to the consistency you like
(maybe 3/4 cup)

Pulversize it all together in a food processor until it’s a thick paste or slightly liquidy. You can add a little water if you want it thinner but don’t want so much oil.

This pesto can be used for so many things! Freeze it for using whenever you want some green zing in your life. We’ve had it on fresh corn kernels, dehydrated onto walnuts, and hopefully on crispy, super powered, kale chips too.
